For over a year now I’ve been traveling the roads of Texas in search of that Texas delicacy, Chicken Fried Steak. Okay, it’s not a delicacy, but it’s Texas. Some people call it Country Fried Steak, but they’re not from Texas.
Here is the ritual I go through every time I order a Chicken Fried Steak.
1. I always ask how big it is. When they put their fingers together to make a circle I then ask how many ounces.
2. I ask for the gravy on the side (I forgot a few times)
3. When the Chicken Fried Steak arrives, I give it the smell test.
4. I then look at the bottom to see what kind grease is there.
5. I take a couple of photos
6. I taste it without any gravy
7. Then I taste the gravy without the Chicken Fried Steak
8. I then taste the mashed potatoes and green beans
9. After all that, I cut a piece of Chicken Fried Steak, dip it in gravy and repeat several times (I did not repeat several times on a few of my finds)
You think this job is easy. It is, but you have to take the bad with the good.
